Why is it necessary to use alcohol in the extracts?

We use pure grain alcohol to extract and concentrate the many naturally occurring plant constituents that are poorly soluble in water and easily soluble in alcohol. Alcohol is the ONLY edible solvent that is a natural preservative, and it maximizes the shelf life of our tonics. Taking about 30 drops of one of our extracts is approximately equivalent to consuming l/60th of an ounce of alcohol. To dissipate 95% of the alcohol, put the dosage into a cup of boiling water and let it sit for 10 minutes.
